Enable ServiceMonitoring on helm chart

Hi guys,

a colleague of mine opened this pr fixes issue #209 - By enabling the server's ServiceMonitor (server.metrics.serviceMonitor.enabled: true) an invalid ServiceMonitor resource is rendered by denismaggior8 · Pull Request #211 · temporalio/helm-charts · GitHub.
Do you manage this space directly or do you have any reference to contact?
