Our temporal server version is 1.10.5 and Java client version is 1.14.0.
can we use the latest java client v1.21.1 as clients are backward compatible ? if not, what is the latest client version we can upgrade to?

What is preventing you from upgrading, I think you are using a 2+ years old server version.

Believe you should be able to as the core apis have not changed but there would be a lot of features that you would not be able to use unless you also update server version (which i think would be highly recommended)
